Food, of course, is a very important part of the Spanish culture. Meals are more than just for the purpose of sustenance; they are an event in themselves. Meals are times set aside for slowing down from the day’s busyness, savoring food with pleasure, and taking time to communicate with others face to face.
My family had the opportunity to spend a part of the summer in Spain while my husband was teaching language classes there. I have to confess that meal times were some of my favorite times. I especially enjoyed the sobremesa—time spent after the main part of the meal in conversation, often drinking tea and enjoying a bit of dessert.
One Spanish dessert, my personal favorite, that we enjoyed during this time is called arroz con leche (literally rice with milk), or rice pudding. Arroz con leche is often made with arborio rice because it is a short-grain rice that is especially creamy due to its high starch content.

Arroz con leche is easy to make and delicious either warm or cold. It is often made with cinnamon sticks, orange or lemon zest, and nutmeg sprinkled on top. This flavor combination makes it the perfect fall treat, although I like it enough to eat any time of year! It is smooth, creamy, and delightful. Try it for yourself and see if you agree!
